Mangoat Salad ;)

I know I haven't been good at posting yummy, healthy recipes when I find them, but I made one tonight that was good so I thought I would post it. I made up this salad so figured I could name it myself, hence the title of this post! Tee-hee!

Any kind of lettuce you like (I used a mix of romaine, iceberg, and green leaf)
1 can Garbanzo beans
Mango chunks (I used frozen and defrosted them cuz it's cheaper than fresh!)
Goat Cheese (I used the kind seasoned with basil and sun dried tomatoes)
Garlic (I used 4 cloves, but I LOVE garlic)
EVOO (Extra Virgin Olive Oil)

Mince the garlic, add to the beans, add a couple tblsp of EVOO. Stir together until evenly coated and spread over a foil covered cookie sheet. Broil until the beans and garlic start to get a crispy brown color. Take out of oven and let cool (doesn't have to be completely cool). Put your lettuce in a bowl and add your mango chunks, crumble the goat cheese in, and add your beans. Drizzle the following dressing over the top.


I didn't measure this so just use your best judgment. I just added a few tblsp of Mustard, added some balsamic vinegar, then some EVOO. I can't take credit for the dressing, I saw Rachel Ray make it and she may have used a fancy mustard but I just used plain old yellow.

So there you have it. It was delicious and really satisfying for a salad. The beans really fill you up and give you your protein so you don't need meat! I am sure you could add chicken though if you have guys you cook for that refuse to eat a meal that doesn't involve meat! Enjoy!

Looks pretty good, although I am not a huge fan of the goat cheese. But I bet feta would be good. I'd have to call it the fetman salad..hahaha!

Yum, I like your taste. We love goat cheese in our house. Good on Pizza!

I'm with Jamie on this one. I would use feta cheese.
